Our caramel is made using the traditional French méthode sèche — the dry method — in which pure cane sugar is added to a copper pan with no water and heated slowly until it melts and transforms, through a series of complex chemical reactions, into the deep amber, intensely flavored liquid that is the essence of true caramel. This method, preferred by professional confectioners for the depth of flavor it produces compared to the wet method, requires constant attention and considerable skill — the difference between perfectly caramelized amber and burned, bitter carbon is a matter of seconds and a few degrees of temperature.
When the sugar has reached precisely 118°C — a temperature we monitor using a calibrated digital thermometer rather than relying on visual cues alone — we add room-temperature unsalted French butter in carefully measured portions, stirring vigorously to incorporate while managing the violent bubbling that occurs as the butter meets the molten sugar. The butter adds richness, a faint dairy sweetness, and the emulsifying properties required for the caramel to remain smooth and fluid at room temperature.
Fresh heavy cream, warmed to prevent thermal shock, is then streamed in slowly and stirred to create the final caramel sauce — a glossy, flowing liquid of extraordinary depth and complexity.
